I love the proposal Pereney Omar, the young Venezuelan chef that we can enjoy the channel Gourmet.com.

recently got to meet Omar in GIS 2009, muuuyyyy kind, and exactly like how we see it on TV, ah .... for me ... is high!.

If you have not seen a chapter of your program I COOK I make the suggestion to see at least one, and if I wear are likely to share a national feeling of happiness to see another Venezuelan talking cachapa of bread jojoto and Dusty chicken the world, and teach them.

Omar is easy to understand, makes it look easy to cook, and his vocabulary and expression are clear and helpful venezolanisimossssss suitable for all ages.

The first time I tuned into the program did not recognize him, but I loved it, of course, told me shortly after "is Venezuelan !!????" between affirmation surprise and joy was his accent and speech. Grilled vegetable chapter, so the recipe was not what gave him away.

I hope Omar retain that cheerfulness in dealing with people who approached him and speak to the camera, and to continue learning and teaching others so willingly.

could not pass the month of August without comment on my visits always pleasing Chacao municipal market in Caracas.


I think is a good choice to find many surprises fresh vegetables, fruits, meats, seafood, to spices and curios.


Vanilla natural spectacular poppy seeds , dried onion and lavender flowers , on the first floor, a seat on the corner and has a giant cinnamon sticks.


Rabbit for the more courageous than I, lamb and goat , all very cool, is not always easy in the supermarket for example.


wonderful tuna tartare, squid and octopus to sea, not forgetting of thinly sliced \u200b\u200bturkey breast.


In this market there is Uchuva , if not all the time, but here I have seen, thyme in racimitos of the most aromatic, the mass jojoto milling at the time, and the less naturalistic ... the crackling to arepitas arepas or ready to eat pork rind!.



All this in the same place, clean, without odor, with easy access to parking or walk like me.

Madrid residents will have an appointment this Saturday June 20 in what has been called the Oreo challenge. The famous biscuit brand aims to bring together as many people at once tasting Oreo.


The event will be attended by representatives for the Guinness record as Oreo looking to beat the record of as many people in a blind tasting or testing of a product.


Those who have the pleasure of attending the day-challenge, must recognize in the tasting, two cookies, which is Oreo and what is not, ie vs. Oreo. another cracker of a generic brand.

has long wanted to make biscotti . This is a comprehensive semi-sweet version that can be tailored to any taste, including salt.

Biscotti is a twice baked biscuit, very crisp, rich dipping in coffee or milk.

For a dozen biscotti needed:

1. 3 / 4 cups whole wheat flour
2. 1 / 2 cup all-purpose flour
3. 1 / 4 teaspoon granulated yeast
4. 1 / 3 cup white sugar
5. 2 eggs
6. 1 / 4 cup liquid milk
7. juice of half a lemon
8. Lemon zest, vanilla, spices to taste, pinch of salt.
9. 1 / 2 cup flaxseed

Join flour, yeast and sugar. Integrate with the eggs one by one. Add milk, lemon juice and zest, vanilla and spices (I used cinnamon and ground cloves), and finish with salt and flax seed. Make sure they participate each ingredient before adding the next.

Walk through the State of Trujillo, Venezuela, I brought the flavor and texture that gives the corn arepas with all its shell, but with mass prepared in traditional style house industrial not know today, with its taste is still in its higher purity.


These are the steps to achieve mass and then shelled corn arepas or integral with a body soft but rustic, yellow and pretty, with all the nutritional advantages of whole grain, and although takes a little work, I think it's worth even the effort to work with the grinder!.




Of course, the industrial way we provide comprehensive and enriched precooked dough ready in a few minutes is a wonder, but not to be missed this alternative to the way the grandmothers.




For mass
Makes 12 arepas is needed:


Ingredients:



  1. 1 kg of corn husk yellow



  2. Water

  3. boiling filtered water

  4. dough



  5. 50 g butter,



  6. salt to taste




Procedure for the dough:




  • Boil the corn (which is I previously removed impurities and washed) with water to double its volume. This could take about two hours.



  • If necessary add more water, make it hot



  • By being al dente, remove from heat, cool with cold water, drain and let cool completely.



  • mill grind the corn.



  • With corn grinding, kneading integrating filtered water and butter and salt, until soft and manageable dough does not stick to hands or table.



  • ready, can be kept well packed in the refrigerator or use immediately for some tasty arepas , or tortillas, tamales, hallaquitas or whatever you want.

Skewered pork knuckles


Time: 2 hours and 45 minutes.

Ingredients: pork knuckles
2 a kilo each,
1 onion, 2 cloves
,
pepper, laurel
,
salt.

Preparation:
The knuckles are washed, dried well and placed in a container with two gallons of boiling water, salt and some pepper. Then add the peeled onion, bay leaf and cloves, leaving it to cook on a medium heat for one hour. During this time, frothed frequently.

After cooking, remove the shank of the water and practice them a few cuts in the skin using a sharp knife. Are strung on skewers oven and roasted for about an hour and a half on the grill. Once grilled, served with the accompaniment of a salad and a sauce for roast properly. The pork knuckles are much more flavorful when grilled over Charcoal.

Make Wild Rice Bread with Nutella and Cacao for Dia de Reyes

I have prepared for this day according to my New Year's resolutions, a sweet bread (as we know in Caracas), and gave him the form of thread, I did cocoa and filled with Nutella and candied orange and citron , very rich, smooth, and while not the traditional thread (I do not like fruit on top), is an option that I hope you like for breakfast or snack, with a mass alternative to make a Brioche!.



For 2 Cocoa Bread with Nutella and you need:



  • 760 grams of common wheat flour


  • 125 grams of brown sugar


  • 55 grs of butter


  • 40 grams of milk powder


  • 25 grams of cocoa powder


  • 425 grams of water
    filtered


  • Nutella 250 g


  • 40 grams of dark chocolate tablet


  • 250 grams candied citron and orange


  • hazelnuts

  • 50 ml of liquor to macerate the fruit


  • Vanilla


  • ground spices


  • 10 grams of salt


  • granulated yeast 10 grams instant


Knead by machine or by hand, the flour, cocoa and ground spices with water, sugar and vanilla essence to take off the bowl.

In the table, integrating continue kneading 3 / 4 of butter soft but still cold.



Add a little yeast, the remaining butter, finish with salt. May require a bit of liquid to finish adding the salt.
